| BOUQUET |
Gently lifted tropical fruit aromas of guava and pineapple, mineral lift and zesty lime / citrus peel. |
| PALATE |
This is a fresh, light bodied 'Savvy', lent extra weight by the Semillon component and 3 months lees maturation post fermentation. The palate shows more juicy citrus than on the nose, alongside pineapple fruit and crunchy green pear. The mid palate is gently rounded yet the wine finishes with tangy, limey acid. |
GENERAL TECHNICAL
NOTES |
This is something of an experiment for us, our first dabble with a white varietal other than Riesling. The addition of Adelaide Hills Sauvignon Blanc gives the wine a lightly 'green', herbaceous character while local Semillon shines though as juicy lemon fleshing out the palate. |
| SERVE |
Nicely chilled as a Spring drink, perfect with new season flavours of stuffed zucchini flowers, blanched asparagus and crispy prosciutto or prawn salad with new greens. |
