This is a big, full-flavoured red wine showing primary berry fruit sweetness on the front palate with some savoury, charry oak all held together by a firm tannin structure that will soften with time in the bottle. Our dry-grown Clare Valley shiraz retains great natural acidity that holds this wine in balance. |
| GENERAL |
We blend fruit from a number of different Clare Valley vineyards to ensure the consistency of this wine. While the 2007 vintage gave up to 30% less fruit than average, the result is a heavier, more intense, structured style than its predecessor. |
| SERVE |
If drinking young this needs suitably weighty dishes - classic beef wellington comes to mind - or allow this wine to soften (even 12 months will make a HUGE difference) and then simply... ENJOY! |
